coconut madeleines

Many months ago I shared a simple madeleine recipe with you and in that post I wrote you can get creative with the flavor of these and suggested coconut as an ingredient. I tried that for the first time when a friend asked if I would make coconut madeleines for a party he was having.

To make this version, you’ll follow my madeleine recipe but omit the lemon zest and use coconut instead. I also cut back on the vanilla extract and added almond extract.

Coconut Madeleines

madeleine recipe
4 tbsp of toasted coconut
1/2 tsp of vanilla extract
1/4 tsp of almond extract (optional)

Spread your coconut out on a cookie sheet and place under the broiler with the oven door left slightly open. Do not walk away! Keep an eye on the coconut and once it starts brown remove it from the oven. Follow the madeleine recipe. I hope you like these as much as the party goers did.
